These Fin de Claire oysters, all the way from the chilly waters of the French Atlantic coast, can be savoured here every Saturday and Sunday at Tables Grill’s renowned Champagne Brunch. In France, they’re carefully nurtured in knee-deep claire basins (oyster beds) for a stipulated number of months, with a limit on the number per square metre, where they fatten and take on their wonderful flavour. The result is a less meaty but juicy oyster - rich in water, with translucent or white mantle and an earthy flavour that’s smooth with an incredible lingering aftertaste.


Wine Companion:  Pair those lovely oysters with my favourite rosé, Chateau d’Esclans Whispering Angel  from Provence. The wine is bone-dry and has good acidity, fruitiness and nice length - good for all occasions and a great match with oysters.
